(Key) Lime Pie

A couple days ago we had a surplus of limes at our house so I fished around for a recipe for them. I settled on another one from the AllRecipes app for a Key Lime Pie. Using a basic digestive + granulated sugar + margarine crust with vanilla whipped cream topping, I made the beauty below. It's very tart, soft and yummy. It's so light and airy though, that care must be taken when removing pieces from the pan because it will make a mess.

The filling was also very basic: beat 4 egg yolks until they look lighter, then add a 14 oz. tin of condensed milk and mix well. Add 1/3 cup of lime juice slowly and mix until it's well aerated. Pour in a prepared crust and bake for 15 - 20 minutes at 350 F. It will jiggle a bit when coming out. Let it cool completely for at least 2 hours before adding any topping.
